Tuscan cuisine
“How salt is the bread of others”. The Tuscan cuisine is composed of dishes and cakes which maintain unchanged their preparation. The main typical product is the Tuscan bread characterized by the lack of salt. It seems that this use came from the XII century when, at the height of the rivalry between Florence and Pisa, the population of Pisa broke the salt trade. The importance of the bread, in Tuscany, is testified by a long series of ancient recipes still very used: when the bread is dry, in fact, we cook many dishes as the panzanella, the panata, the ribollita, the acquacotta, the pappa al pomodoro, the fettunta, the vegetable soup and the black cabbage soup. An other tradition of our cuisine is the use of white meat and game. The animals like chickens, turkeys, guinea fowls, geese and pigeons, together with bunnies and game as hares, boars, pheasants and porcupines, are all part of the menu' of the great events. The pigs are very used, just think about the Tuscan salami, the ham conserved under salt, the sausages and other traditional products as the Buristo. We even have traditional cheeses, as Tuscan pecorino, one of the most famous comes from Pienza. For the cakes, you can find the panforte, the tiramisù and so much more.
Environment and Nature
Surrounded by the green forests of the Tuscan apennine, the Casavecchia agritourism is the perfect destination for the nature lovers. There are many itineraries that our guests can tackle alone, on foot or by bike, inside the conifer and broadleaved woods. These woods are even composed of chestnut trees, oaks, beechwoods, white firs and, beyond those, the great grazings. The environment surrounding the Casavecchia farmhouse has an interesting faunistical heritage; among the mammalian, the wolf finds the favourable conditions to stay here, together with three types of ungulates: boars, roes and fallow deers. The rodents tied to the forest are the wild mouse with yellow neck, the dormouse and the squirrel, while among small carnivorous there are the stone marten, the weasel, the badger, the skunk and the fox. In the ecosystem we can also find many birds as the blackcap, the chaffinch, the winter wren, the blackbird, the robin the goldcrest and the wood pigeon. We also have to cite the bird of prey as the sparrowhawk, the kestrel, the buzzard, the eagle, the goshawk, the owl and the hawk; even reptiles and amphibians have found the optimal conditions to live in those woods, as the salamander, the Italian frog and the salamander of the glasses.
